- 3-4 teaspoons olive oil
- 2 to 2-1/2 lbs. (1 kg) beef stew meat in chunks
- 2-3 large garlic cloves
- 2 yellow onions, peeled and chopped
- 1 cup crushed tomato.
- 1/2 cup white wine or 1/4 cup brandy
- salt, pepper and nutmeg.
- 2 bay leaves
First heat a pan and coat with the oil. When hot, add the meat and fry for about 10 minutes, be careful to do not burn it.
Add the onions and garlic, all chopped very thin, and fry for another ten minutes with the pan covered.
Then add the tomatoes, bay leaf, wine, half a glass of water and a little nutmeg. Boil and simmer for about 40 minutes with the pan covered. If the mixture gets dry add some hot water if necessary.
When the meat is tender, you can add some salt and pepper and simmer another five or ten minutes.
You can serve it with french fries, mashed or roasted potates.
